Active discounts and current prices are scored the same way, so a code that is live does not slip past the floor. Missing, zero, and suspiciously low costs are listed so the numbers can be trusted. A discount that cuts too deep can be deactivated from the list.
With checkout protection on, a cart line that would sell below your minimum gross margin is rejected at checkout, using the costs and rules the app keeps in step with your store.
Set one minimum gross margin for the store, count shipping and payment fees in the cost, and override it for a product or a collection. A product can also be excluded from the promotion checks.
When a new problem is found, such as a discount or price below your floor or a missing cost, get an email, and optionally a Slack message to a webhook you provide. Alerts are part of Pro and Business. A weekly digest email is part of the Business plan.

It compares each variant's cost with your minimum gross margin. You can test a discount before it goes live, see which active discounts and prices miss the floor, and turn on checkout protection so a cart line below the floor is rejected at checkout.
It reads products, variants, inventory item costs, collections, and discounts (read_products, read_inventory, read_discounts). It also holds write_products, only to write the variant metafields its checkout function reads; write_validations, to register the checkout validation; and write_discounts, to deactivate a discount when you choose to. It does not request orders or customer data.
It does not edit product titles, prices, or costs. The only data it writes to your store is app metafields: one on each variant and one on the shop (the checkout policy), which the checkout function reads. A discount is deactivated only when you press Deactivate on it. Checkout protection, once you turn it on, rejects cart lines that would sell below your minimum margin.
No. The app does not request customers or orders, so it holds no customer personal data. It stores your catalog mirror, margin rules, and alert settings.
Percentage discounts, and fixed-amount discounts taken off each item, that apply to the whole catalog or to products or collections. Buy X get Y, free shipping, discounts from other apps, discounts that target specific variants, and fixed-amount discounts that are not per item are marked as not evaluated instead of being given a made-up margin.

Uninstalling deletes the store's data from the app's database, including its catalog mirror, rules, alert settings, and sessions. Shopify's shop/redact request deletes it as well.
The app holds no customer data. Uninstalling deletes everything it stored.
